OF MEZCAL

The word Mezcal finds its roots in the Mexica (Aztec) civilization which in its language, Nahuatl, it is mexcalli, composed of metl (maguey or agave), and ixcalli (cooked), thus Mezcal means cooked maguey.

Mezcal comes from maguey whose scientific name is agave, from the Greek Ágavos which means something admirable, noble, illustrious; and it is a very versatile vegetable plant of which one can obtain textiles for clothing, construction materials, and possesses many health benefits as well as mezcal’s raw materials. There is archeological evidence that nomad and semi nomadic indigenous peoples from Mesoamerica used it 10 thousand years ago for different purposes. Some scholars have the maguey to be Mexican from where it has traveled to the rest of the world.

It is a plant that matures in 3 to 35 years depending on the specie. When it flowers it is known that it has arrived to its maturity point and it will only happen one time, after which the dying process of the plant begins. It has in its center a piece called piña, which was used in pre-hispanic times to obtain a drink, pulque, as a product of the fermentation step to which its syrup is subjected.  But it is not until the arrival of the Spanish when the distillation process is introduced that marks the beginning of drinks like mezcal.

Since then, it has been a very popular drink in México, and by the end of the 20th century a new era of export of this drink begins, making it a very popular drink in different parts of the world.
