This is an agave whose main characteristic is its brunches which are long, thin and pointing to the sun, like a spade, translation of Espadín. It takes for it 6 to 8 years to mature, a cultivated plant, not a wild one, which allows for it to make better use of its sugars needed for the elaboration of Mezcal. Espadín is one of the most sought after Mezcal by the consumers due to its versatility to drink it strait or in a cocktail of your choosing.
